Raspberry Almond Treat

Creamy semolina pudding with raspberry puree, almonds, and chia seeds.

  • 140g konjac rice
  • 1 liter almond milk
  • 30g erythritol
  • 1-2 drops vanilla flavoring
  • 200g raspberries
  • Almonds and chia seeds to taste

Put the konjac rice into a blender and pulse until desired granularity is achieved.

Simmer the konjac semolina with almond milk on a low heat and sweeten with erythritol. Stir occasionally.

When the semolina pudding has reached the desired consistency, remove from the heat and allow to cool.

Meanwhile, blend 150g of raspberries to make a puree.

Serve the semolina pudding with raspberry puree, fresh raspberries, and a sprinkle of almonds and chia seeds to enjoy.
